Tofu is a little more work. I think they up the price because it's such a hassle to cook with. You have to be careful with it or it can dissolve into mush or crumble on you. I love tofu but find it a challenge to cook with at times.Take out vegan chinese is too expensive! Everyone tries to screw over vegans/vegetarians. Lots of places even charge $3 extra to replace beef or chicken with tofu. Wtf? You can buy tofu for under a dollar a pound, less than the price of meat.
So I say fuck it and make my own for a third the price. Mock veggie fish FTW!

It's simple to work with. Get the firm kind. Drain the water;get two heavy plates; place tofu on one plate and another on top; put on top of the plate two or three of your heaviest canned goods; wait an hour. You then slice up the tofu into strips and cook like you would beef or chicken strips in your meal. Just make sure you turn them over gently. Another option is to do the same above, and then marinade the tofu. Put some oil in a non-stick pan and fry them till you get the texture you want.Tofu is a little more work. Yes, I do, actually I've never fucked up chicken and rice. Ever. I'm not even sure how you could fuck that up. I guess it's what you're used to. New Mexico cuisine is very unique and flavorful and some dishes would be a challenge for the uninitiated. Same goes for toful. I'm not very lucky with it. Do you have any idea how long it takes to make broiled carne asada meat? That costs nowhere near the price of what restaurants charge for tofu. Pollo con arroz is the easiest dish to fuck up. Vegan food is simple compared to meat eater. What? You gonna get sick from "under cooking" plants? If you don't cook something long enough, all you tell the guests is it's "raw."
The problem is the rice gets too dry and the chicken tastes too bland. I found to get perfect vegan pollo con arroz is to marinade the chicken and pan fry lightly until not quite done. For the rice, keep adding stock, a quarter cup at a time until all the water is nearly boiled off. Keep doing that until three cups are used for each cup of rice. Add the chicken.
